中国人有多爱吃火锅,走在路上,看个窨井盖,都以为是九宫格火锅。今天我们不说吃的,我们来说说名扬中外的火锅。


火锅(hotpot) 真正的定义


What de fines hotpot? 

怎么才算火锅? 


● Broth is brought to a boil and left simmering for the duration of the meal: 高汤煮沸、不熄火,整个涮火锅的过程中持续加热 

● Broth:清汤、锅底汤;soup指本身就是一个菜的一锅汤,里面已经有内容了 

● Simmer: 炖煮 

● Cook as you eat: 一边吃一边煮 

● Cook your own food: 自己涮自己要吃的


涮锅怎么表达呢?

你可以用这些词: 

Quickly boil, quickly dip(蘸) 

但更贴切的词是: 

Dunk: 快速放入, 比如美国甜甜圈连锁店Dunkin' Donuts. 还有篮球灌篮叫 slam dunk 

Dunk food in the broth to cook it : 把食材丢到锅底汤去涮 

You usually eat hotpot with family and friends. It has great atmosphere, very communal: 通常是和家人、朋友一起吃火锅,气氛特别好,大家一 起,非常热闹 

Solo hotpot: 一个人吃的小火锅


四川火锅

Chongqing style:重庆火锅 ;

Chengdu style:成都火锅 

A key difference is the base:一大区别是底料 

Chongqing - rendered beef fat: 重庆用牛油 

Chengdu - rapeseed oil /canola oil: 成都用菜籽油


配菜: 

Innards and organs: 内脏;Ox aorta: 黄喉 ;Beef tripe: 牛百叶;Congealed blood: 血

潮汕火锅

Chaoshan hotpot:  潮汕火锅 

Fresh beef hotpot:  新鲜牛肉火锅 

Beef that has been freshly  slaughtered, hasn't been frozen:当天宰杀,不经冷冻 

Seafood 海鲜


北京涮肉

Beijing lamb hotpot: 北京涮羊肉火锅 

Mutton: 羊肉,lamb 也是羊肉,确切说是小羔羊肉 

Charcoal: 炭火


蘸料调料不可少

● Dipping sauces:蘸酱 

● Condiments: 调味料 

● Sesame paste: 芝麻酱 

● Sesame oil: 麻油 

● Minced garlic, ginger, spring onions: 蒜末、姜末、葱末 

● Criander/cilantro: 香菜 

● Chinese BBQ sauce: 沙茶酱 

● oyster sauce: 蚝油 

● Vinegar:醋
